When we refer to “whole grains” vs. “enriched grains,” what are we talking about? In brief, whole grain products are made with the grain’s whole kernel, including all three of the bran, the endosperm, and the germ. By contrast, enriched grain is the finely ground endosperm of the kernel that has been enriched or fortified with iron and four B vitamins: folic acid, riboflavin, niacin, and thiamin. Enriched bread, for example, is a great source of iron, vitamin B, folic acid, and complex carbs.
