Food Can Be Simple

As humans, we are experts in over thinking or over complicating things….like food. Food in a crisis is very simple: ingredients should be basic, readily available, and satisfying. Fresh is great. But if unavailable, canned and frozen foods can be even more nutrient dense. Pasta tossed with chickpeas sautéed in olive oil with garlic, dried rosemary and frozen spinach (top with parmesan) is a perfect example of how to make a delicious, nutritious meal in under 30 minutes.
